Ingredients
  

  • 4 Large eggs
  • 2 cups Tomato sauce (preferably homemade)
  • 1 Small onion, finely chopped
  • 1 Small green bell pepper, chopped
  • ½ cup Peas (fresh or frozen)
  • 2 Cloves garlic, minced
  • 100 g Chorizo (or ham), sliced
  • 1 tbsp Olive oil
  • ½ tsp Smoked paprika (optional)
  • Salt and pepper to taste
  • Crusty bread for serving (optional)

Instructions
 

  • Preheat your oven to 180°C (350°F).
  • Sauté the vegetables: In a pan, heat olive oil and lightly sauté onions, bell peppers, and peas until soft.
  • Prepare the tomato base: Add homemade or store-bought tomato sauce to the vegetables and let it simmer for 10 minutes. Season with salt, pepper, and a pinch of paprika if you like.
  • Assemble the dish: Transfer the mixture to clay pots or a cast iron skillet. Make small wells and crack eggs into each one.
  • Bake: Put the pots or skillet in the oven and bake for about 12–15 minutes, or until the egg whites are set, but the yolks are still runny.

Notes

Pro Tip: Keep an eye on the eggs. You want the whites fully cooked while the yolks remain slightly runny for that perfect texture.
This recipe is for 4 people, but I adapted it for 2. Feel free to adapt it for as many people as you want.
