Ingredients
  

  • 1 tbsp Olive oil
  • 1 Onion, chopped
  • 1 Red bell pepper, chopped
  • 2 Cloves garlic, minced
  • 1 lb Chicken thighs Boneless, skinless chicken breasts, cut into 1-inch pieces (Optional)
  • 1 tsp Paprika
  • ½ tsp Cumin
  • ¼ tsp Salt
  • ¼ tsp Black pepper
  • Saffron threads Optional
  • 1 cup Medium-grain rice, like Bomba or Arborio
  • 2 cups Chicken broth homemade if possible
  • ¼ cup Chopped fresh cilantroor parsley, for garnish

Instructions
 

  • Sear the Chicken: In a large skillet, heat some olive oil over medium-high heat. Sear the chicken thighs skin-side down until they are golden brown. This step is crucial for developing flavor.
  • Sauté the Vegetables: Remove the chicken from the pan and set it aside. In the same pan, add diced onions, and red bell pepper. Cook until the vegetables are softened.
  • Cook the Rice: Add the rice to the pan, stirring to coat it with the oils and flavors from the vegetables. Pour in the chicken broth and add saffron if using. Return the chicken thighs to the pan, nestling them into the rice.
  • Simmer: Cover the pan, reduce the heat to low, and let everything simmer until the rice is cooked and the chicken is tender. This usually takes about 25-30 minutes.
  • Serve: Garnish with chopped parsley or cilantro before serving.
