Borrachuelos Malagueños: How to Follow A Sweet Tradition
Borrachuelos is a traditional Andalusian dessert, particularly popular during the Christmas season. The recipe involves making a simple fried dough that is then soaked in a syrup made from sweet wine. The dough is typically filled with a mixture of ground almonds, cinnamon, and lemon zest, which gives it a unique and irresistible flavor. Here's a simple recipe for you:
In a large mixing bowl, combine the flour, white wine, olive oil, and a pinch of salt. Mix well until a smooth dough forms. Cover and let it rest for at least 30 minutes.
In a separate bowl, mix the ground almonds, sugar, lemon zest, and sweet wine to create the filling. It should have a paste-like consistency.
Take small portions of the dough and roll them into thin circles. Place a spoonful of the filling in the center of each circle.
Fold the dough over the filling, sealing the edges to form a crescent shape or rectangle. Press the edges firmly to ensure they stick together.
Heat olive oil in a pan for frying. Fry the borrachuelos until they are golden brown on both sides.
Once fried, place the borrachuelos on paper towels to absorb excess oil.
In a separate pan, heat honey until it becomes liquid.
Dip each fried borrachuelo into the honey, coating it thoroughly. If you like, you can also sprinkle sesame seeds on top.
