Carbayones are one of Asturias' most iconic pastries, originating from Oviedo. These delicious treats contain a thin, buttery puff pastry base, an almond-rich filling, and a crispy sugar glaze that adds the perfect crunch.
The key to a great Carbayón lies in the quality of ingredients, particularly the Marcona almonds, which are known for their smooth texture and sweet flavor. The final touch is the glossy egg yolk glaze, which enhances the pastry’s rich taste.

Ingredients
  

For the Pastry Base:

  • Puff pastry dough (homemade or store-bought)
  • Flour (for dusting)

For the Almond Filling:

  • 200 g Marcona almonds (ground)
  • 100 g Sugar
  • 2 Egg yolks
  • 50 ml Water
  • 1 tbsp Lemon zest

For the Egg Yolk Glaze:

  • 2 Egg Yolks
  • 100 g Sugar
  • 50 ml Water

For the Final Sugar Coating:

  • 150 g Powdered sugar
  • 2 tbsp Water

Instructions
 

  • Prepare the Pastry Base:
    Roll out the puff pastry on a floured surface.
    Cut into oval shapes and place them in small tart molds.
    Chill in the fridge for 30 minutes.
  • Make the Almond Filling:
    In a saucepan, heat sugar and water until it forms a light syrup.
    Add the ground almonds and stir constantly.
    Remove from heat, add egg yolks and lemon zest, and mix well.
    Let it cool before filling the pastry shells.
  • Fill and Bake:
    Preheat the oven to 180°C (350°F).
    Fill the pastry shells with the almond mixture.
    Bake for 20 minutes until the filling is set.
  • Prepare the Egg Yolk Glaze:
    In a small pan, dissolve sugar in water and heat until it thickens slightly.
    Remove from heat and whisk in egg yolks.
    Return to low heat and stir until it thickens (do not let it boil).
  • Glaze and Set:
    Spread a thin layer of the egg yolk glaze over the baked pastries.
    Let them cool completely before moving to the final step.
  • Make the Sugar Coating:
    Mix powdered sugar with a little water until you get a thick glaze.
    Pour the glaze over the pastries and let it set for at least one hour.
  • Enjoy Your Homemade Carbayones:
    Once the glaze hardens, your Carbayones are ready to enjoy. Pair them with a cup of coffee, Spanish brandy, or a traditional Asturian liqueur for an authentic experience.

Notes

The Marcona almonds are essential because of their natural sweetness and smooth texture, giving the filling a creamy, nutty flavor.
