Ingredients

  • 1 tbsp Sugar
  • Pinch of Salt
  • 3-4 tbsp Cold water

  • 2 cups Cooked and mashed pumpkin (canned or fresh)
  • 3 Eggs
  • 1 cup Milk
  • 1 cup Sugar
  • 1 tsp Ground cinnamon
  • ½ tsp Ground nutmeg
  • ½ tsp Vanilla extract
  • Pinch of salt

Instructions
 

Prepare the Crust:

  • In a large bowl, combine the flour, sugar, and salt.
  • Add the cold, cubed butter and use a pastry cutter or your hands to work the butter into the flour mixture until it resembles coarse crumbs.
  • Gradually add the cold water, a tablespoon at a time, and mix until the dough comes together.
  • Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

Roll Out the Dough:

  • On a floured surface, roll out the chilled dough to fit a 9-inch pie dish.
  • Carefully transfer the dough to the pie dish and press it into the bottom and sides. Trim any excess dough hanging over the edges.

Prepare the Filling:

  • In a large bowl, whisk together the mashed pumpkin, eggs, milk, sugar, cinnamon, nutmeg, vanilla extract, and a pinch of salt until well combined and smooth.

Assemble the Pie:

  • Pour the pumpkin filling into the prepared pie crust.

Bake the Pie:

  • Place the pie in the preheated oven and bake for about 45-50 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.
