Ingredients
  

  • 2 cups All-purpose flour
  • ½ cup Granulated sugar
  • 4 Large eggs
  • 1 cup Vegetable oil
  • 1 cup Milk
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 2 tsp Baking powder
  • ½ tsp Salt
  • Powdered sugar (for dusting)

Instructions
 

  • Preheat your oven to 180°C (350°F) and grease a 9-inch round cake pan.
  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
  • In a separate bowl, whisk together the eggs, vegetable oil, milk, lemon zest, and lemon juice until well combined.
  • Slowly add the wet ingredients to the dry ingredients, stirring gently until the batter is smooth and no lumps remain. Be careful not to overmix.
  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake in the preheated oven for about 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Once the cake is baked, remove it from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.
  • Once the cake has cooled, dust the top with powdered sugar.
  • Cut into slices and serve.

Notes

The Spanish lemon cake can be enjoyed on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
