Ingredients
  

  • cup Honey
  • ½ cup Sugar
  • ¼ cup Water
  • 2 Large egg whites
  • 1.5 cups Heavy Cream
  • ½ tsp Almond extract
  • ½ cup Sliced almonds, toasted

Instructions
 

  • Make the meringue: In a stand mixer, beat egg whites until soft peaks form.  
  • Make the syrup: In a saucepan, combine honey, sugar, and water. Bring to a boil, then reduce heat and simmer until sugar dissolves.
  • Combine: Slowly pour the hot syrup into the egg whites while beating continuously. Continue beating until the mixture cools completely and forms a meringue.  
  • Add cream and flavorings: In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream, almond extract, and toasted almonds into the meringue.
  • Freeze: Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions.
  • Harden: Transfer the ice cream to an airtight container and freeze for several hours before serving.

Notes

Tips:
  • For a richer flavor, use almond milk instead of water in the syrup.
  • Add a pinch of salt to enhance the flavors.
  • For a more intense almond flavor, toast the almonds before slicing.
