- 1 Large, ripe tomato
- 1 tbsp Extra virgin olive oil
- 1 Clove garlic (optional)
- Salt to taste
- 2-3 Slices crusty bread (such as ciabatta, baguette, or country bread)
Prep the tomato: There are two ways to prepare the tomato:Grating: Grate the tomato flesh on the coarse side of a box grater into a bowl. Discard the skin.Rubbing: Cut the tomato in half. Rub the cut side of the tomato flesh firmly onto the toasted bread (see step 3). Season the tomato: If you grate the tomato, add the olive oil and a pinch of salt to the bowl. Stir to combine.
Toast the bread: Toast the bread slices in your preferred method: toaster oven/broiler (2-4 minutes), stovetop griddle/pan (1-2 minutes per side), or use untoasted bread for a softer texture.
Assemble: If using garlic, rub the halved clove on the toasted bread. Spread the tomato mixture (or rub the tomato half directly) on the toasted bread. Drizzle with additional olive oil and sprinkle with a pinch of salt to taste.
Tips:
- Use the ripest tomatoes you can find for the best flavor.
- If the grated tomato mixture seems too watery, let it strain in a sieve for a few minutes.
- Adjust the amount of garlic and olive oil to your preference.
- Pan con Tomate is best enjoyed immediately.
