  • 12-16 Pimientos del piquillo (canned or jarred)
  • 8 oz Creamy goat cheese (about 225 grams)
  • 2 Cloves of garlic minced
  • 2 tbsp Fresh parsley finely chopped
  • Salt and Pepper to taste
  • Olive oil for drizzling

Instructions
 

  • Prepare the Filling:
    In a mixing bowl, combine the creamy goat cheese, minced garlic, chopped fresh parsley, and season with salt and pepper. Mix everything well until you have a smooth and creamy filling.
  • Stuff the Peppers:
    Carefully open each Pimiento del Piquillo and stuff them with the goat cheese mixture. You can use a small spoon or your fingers to gently fill each pepper.
  • Serve:
    Serve it cool. Drizzle olive oil over Piquillo when serving
