Ingredients
  

For the fideos:

  • 1 lb Fideos (short, thin noodles)
  • ¼ cup Olive oil

For the Sofrito:

  • 1 Onion, finely chopped
  • 2 Cloves garlic, minced
  • 1 Red bell pepper, finely chopped
  • ¼ tsp Saffron threads
  • 1 tsp Smoked paprika
  • ¼ tsp Salt
  • ¼ tsp Blca pepper

For the seafood:

  • 1 lb Shrimp, peeled and deveined
  • 1 lb Squid, cleaned and cut into rings
  • 1 lb Mussels, scrubbed and bearded

For the broth:

  • 4 cups Fish stock or seafood broth
  • 1 (14.5-ounce) Can diced tomatoes (Better use fresf tomatoes)

Garnish:

  • Chopped parsley

Instructions
 

  • Prepare the Ingredients:
    Begin by cleaning and preparing the seafood. Peel and devein the shrimp, clean the calamari, and scrub the mussels. Chop the onion, garlic, and tomatoes.
  • Sauté the Base:
    Heat olive oil in a large, shallow pan. Add the onion and garlic, and sauté until translucent. Stir in the chopped tomatoes and cook until they begin to break down.
  • Add the Noodles:
    Add the fideos to the pan and toast them lightly until they begin to turn golden. This step is crucial for achieving the characteristic texture of Fideuà.
  • Incorporate the Seafood:
    Add the prepared seafood to the pan, along with paprika and saffron. Stir to combine and let the flavors meld together for a few minutes.
  • Pour in the Stock:
    Pour in the fish stock or broth, ensuring that the noodles and seafood are fully submerged. Bring to a boil, then reduce the heat and let it simmer until the noodles are cooked and have absorbed most of the liquid.
  • Garnish and Serve:
    Once the noodles are tender and the broth has mostly evaporated, remove the pan from heat. Garnish with freshly chopped parsley and serve hot.
