Ingredients
  

  • 1 tbsp Olive oil
  • 1 Large Onion, chopped
  • 10 Cloves garlic, minced
  • 4 cups Chicken broth
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • Stale bread
  • Parsley, for garnish (optional)

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and cook for 1 minute more, until fragrant.
  • Stir in chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Remove from heat and carefully puree the soup using an immersion blender or transfer to a blender in batchees.
  • Taste and adjust seasonings as needed.
  • Serve hot, garnished with fresh parsley, if desired. Accompany with crusty bread for dipping.
