- 1 tbsp Olive oil
- 1 Large Onion, chopped
- 10 Cloves garlic, minced
- 4 cups Chicken broth
- ½ tsp Salt
- ¼ tsp Black pepper
- Stale bread
- Parsley, for garnish (optional)
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more, until fragrant.
Stir in chicken broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
Remove from heat and carefully puree the soup using an immersion blender or transfer to a blender in batchees.
