Ingredients

  • 1 ½ cup All-purpose flour
  • 1 cup Plain yogurt (or Greek yogurt)
  • 1 cup Granulated sugar
  • ½ cup Vegetable oil (or melted butter)
  • 3 Large eggs
  • 1 tsp Vanilla extract
  • 2 tsp Baking powder
  • ½ tsp Baking soda
  • Pinch of salt

Optional Add-ins:

  • Zest of 1 lemon or orange (for flavor)
  • ½ cup Chocolate chips, nuts, or dried fruits (for texture)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
  • In a mixing bowl, whisk together the eggs and sugar until creamy and slightly pale in color.
  • Add the yogurt, vegetable oil (or melted butter), and vanilla extract to the egg-sugar mixture. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can make the cake dense.
  • If you're adding any optional ingredients like lemon or orange zest, chocolate chips, nuts, or dried fruits, gently fold them into the batter.
  • Pour the batter into the prepared cake pan and spread it evenly.
  • Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out clean and the cake is golden brown on top.
  • Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
  • Once the cake has cooled, you can dust it with powdered sugar or frost it with your favorite frosting, if desired.
