  • 1 Onion finely chopped
  • 2 Garlic cloves minced
  • 1 Red bell pepper diced
  • 1 Green bell pepper diced
  • 1 Medium eggplant diced
  • 2 Medium zucchini diced
  • 4 Ripe tomatoes peeled, seeded, and chopped
  • Salt to taste
  • 1 tsp Paprika
